Sometimes I just really really crave chocolate brownies. Why not turn this problem into something a bit healthier! Here is all you need:
1 box brownie mix
1 15 oz can pumpkin puree
Just mix and pour into a brownie pan. Bake at 350 degrees. Depending on the thickness it should be between 25-35 min.
Pumpkin is very high in fiber and who doesn’t need more fiber right?
Here is the fun part.
I like to add almond butter and sometimes pieces of banana. Both are also healthier choices and delicious! I also usually make them in a muffin/cupcake pan because my almost 3 year old is more likely to eat them in that form and also when I add sprinkles 🙂
Another little tip: If you have picky eaters this is also an easy recipe to hide pureed spinach in.
If adding almond butter just take a dollop and swirl around in the mix.
If adding banana, cut into small pieces and put in the mix.
Here is the finished product.
You can see how the pieces of banana get gooie on the inside.

When you add the almond butter, do you add it to the big bowl or into each muffin?

I add it once the mix is already in the pan and than each individual muffin. When I make them in a brownie pan I do the same, but swirl it around more like a ribbon in the pan. You could also mix it into the mix if you would like a more subtle almond butter taste. I personally prefer the bites of almond butter I can see. 🙂
