One of the key nutritional benefits of sweet potato is that they’re high in an antioxidant known as beta-carotene, which converts to vitamin A once consumed. Air Fryer Roasted Sweet Potatoes

This recipe can be modified to also do in the oven, but it will take a little longer than an air-fryer. 

2 pounds sweet potatoes, peeled and cut into large chunks
1 Tsp Olive Oil
Salt and pepper to taste

  1. Preheat air fryer to 390 degrees.
  2. Toss sweet potato chunks in olive oil with salt and pepper.
  3. Spray air fryer basket with nonstick cooking spray. Lay sweet potatoes in a single layer on basket.
  4. Cook for 8 to 10 minutes, flipping once, or until sweet potatoes are fork tender. roasted sweet potatoes
