The Best Healthy Slow Cooker Sweet Potatoes

Here is how to make healthy slow cooker sweet potatoes.

Prep Time- 10 minutes

Cook Time- 3 hours

 


Servings- 6 to 8

chopped sweet potato

Ingredients:

6 to 7 sweet potatoes, peeled and cubed

1 ½ tbsp cornstarch

1 tbsp extra virgin olive oil

1 ½ tsp pumpkin pie spice

¼ tsp cayenne

1 tsp vanilla extract

½ cup orange juice

¼ cup water

Pinch of salt

Chopped walnuts or pecans 

Directions:

  1. Peel and cube sweet potatoes. (1-2 inch cubes)
  2. Place potatoes in a 6qt slow cooker.
  3. Sprinkle with olive oil and toss then cornstarch and toss until coated.
  4. Sprinkle it with  pumpkin pie spice and cayenne.
  5. Pour in vanilla extract, orange juice, and water.
  6. Sprinkle with salt and cover with the lid.
  7. Cook on low for 3 hours, stirring once or twice during cook time.
  8. Top with chopped walnuts or pecans and enjoy!

These sweet potatoes offer a lot of flavor, but lower in fat.
