Nature Valley™ Protein Granola Peanut Butter ‘N Dark Chocolate Super Cookie Recipe

Did you know as a runner you should consume 10-20 grams of protein within 30 minutes of finishing a run?  That is when your muscles are the most receptive to a helping hand from protein.  Nature Valley™, who makes my favorite granola, now makes a granola with added protein.  A 1/2 cup of Nature Valley™ Protein Granola provides 10 grams of protein and 22-26 grams of whole grain, at least 48 grams of whole grain recommended daily.  Sometimes it is hard to be able to get protein in you that quickly after a run, but not with Nature Valley™ Protein Granola.  I just keep some in a bag with my gear and when I’m done running I have a snack with protein ready to go.

Protein is such an important part of your diet.  Protein helps build muscle, helps keep your immunity up and helps your skin and hair looking beautiful. These are some of the many reasons why I make sure I get enough protein throughout the day.

Nature Valley™ Protein Granola gives me a delicious and easy way for me to add protein into my diet all day long.
Breakfast- Nature Valley™ Protein Granola with almond milk.
Lunch- Nature Valley™ Protein Granola on top of yogurt with some fruit.  
Dinner- Top a baked sweet potato with some Nature Valley™ Protein Granola.

My favorite though is my Nature Valley™ Protein Granola Peanut Butter ‘N Dark Chocolate Super Cookie.  These cookies contain good for you ingredients and can even be enjoyed for breakfast.  This is why I call them a super cookie.  These cookies are not just for dessert.

Ingredients
  1. 3 1/2 cups Nature Valley™ Protein Granola Peanut Butter 'N Dark Chocolate
  2. 1 can pumpkin puree (15oz)
  3. 1 egg
Instructions
  1. Preheat over to 350 degrees. Mix all ingredients together with a spoon. Form dough into balls and place on a non-stick or parchment lined cookie sheet. Flatten balls slightly. Bake at 350 for 15 minutes.

The sweet and savory combination of these cookies make it feel decadent, but are packed with protein, whole grain and fiber.  

You can make a larger batch of the Nature Valley™ Protein Granola Peanut Butter ‘N Dark Chocolate Super Cookie and freeze some.  This way you can take out a couple a day to enjoy.
