Fresh Cantaloupe Salsa: Lucky Supermarket #FreshFinds

One of my favorite things about summer is all the fresh produce you can get, especially melons.  On a trip to Lucky Supermarket I found lots of great fresh finds.  The cantaloupes looked so beautiful that I instantly started thinking about what to cook with them.  Chilled cantaloupe soup is always delicious on a hot day, but cantaloupe salsa sounded perfect. 

I love cantaloupe salsa.  As you may know I’m always trying to swap out healthy alternatives to typically not healthy dishes.  This is a great healthy summer dip instead of traditional party dips.  It is so refreshing and crisp.  The cantaloupe flavor adds the perfect amount of sweetness without being overly sweet.  Cantaloupe salsa is also delicious to top grilled fish.

I found everything I needed for cantaloupe salsa at Lucky Supermarket and it all looked super fresh.

Here is what you need to make cantaloupe salsa:
1 Cantaloupe, finely diced
2 Cucumbers, finely diced
2 Roma Tomatoes, finely diced
1/2 Red Onion, finely diced
1 Jalapeno, seeds scraped out and finely diced
1 small bunch of Cilantro, coarsely chopped
1 Lime, zest and juice
1 tbsp Extra Virgin Olive Oil
Salt and Pepper to taste

Mix everything in a large bowl.  Cover and refrigerate for at least a couple hours so the flavors can blend.  If you like it more or less spicy add or subtract jalapeno.  The same can be done with any of the ingredients.

Serve as a salsa dip, top grilled halibut or even great on fish tacos!  It is such a fresh summer food with the cantaloupe and cucumber combo.
