I love Fresh Finds and making a big huge salad. If you pair the right foods it can be heart healthy and delicious. At Lucky Supermarkert the Organic Girl packaged salad mix was on sale, so I seized the moment to make my favorite Heart Health Super Salad with Raspberries.
I love to mix different kinds of greens for a salad. Organic Girl offers a great selection of salad greens that are not only organic, but already pre-washed. I like to take a spring mix and add spinach and arugula. Arugula adds a peppery taste to a salad and with sweet raspberries it is a delicious combo. For this salad I chose the Organic Girl Spring Mix and the Super Greens, which is the most nutritious greens you can get for a salad.
Since it is now officially fall I added some pomegranate seeds. They have antioxidants and add a juicy sweet flavor to compliment the raspberries.
Here is the recipe for my Heart Health Super Salad with Raspberries:
1 package Organic Girl Super Greens
1 package Organic Girl Spring Mix
1 package raspberries
1 pomegranate
1 orange
1/3 cup dried cranberries
1/3 cup toasted pine nuts
red wine and olive oil vinaigrette
crumbled goat cheese to taste
1. Toast the pine nuts: Preheat oven to 375 degrees. Spread pine nuts on a baking sheet and bake 5-10 minutes until golden brown, stirring occasionally. If you don’t care for pine nuts use almonds, pistachios or walnuts.
2. Put the Organic Girl greens in a large salad bowl and toss with salad dressing. Again if you don’t care for a red wine vinaigrette a balsamic or blush vinaigrette is also delicious.
3. Peel and cut orange into pieces. Cut open pomegranate and remove the seeds for the salad. Wash the raspberries. Top your greens with this fruit and all the remaining ingredients.
This salad would be great paired with a meal for a dinner party or even Thanksgiving. It is also delicious just by itself.

Depending on how much they typically eat I would say 4-6 adults as an entree 🙂
