Favorite Turkey Meatballs With Hidden Vegetables

best_turkey_meatballsI think most parents struggle to get their kids to eat vegetables and I am no exception.  My daughter has always loved meatballs though, so I developed this recipe.  These turkey meatballs are not only better for you, but the vegetables add such a great flavor.  I use yellow squash, yellow onion and mushrooms as my vegetables because the color blends in with the turkey and it isn’t obvious there is any hidden vegetables.  My daughter would instantly spot anything green.

1 lb extra lean ground turkey breast
1/2 a yellow onion
1/2 a yellow squash
4 crimini mushrooms
1/4 cup break crumbs of your choice
Garlic salt, salt and pepper to taste

I use extra lean ground turkey breast for the healthiest choice.  Cut half a yellow squash, yellow onion and the mushrooms in pieces and place in food processor.  Blend until thoroughly pureed.  Put the vegetable puree, turkey and bread crumbs in a bowl and mix together by hand.  Add salt and pepper.  

FullSizeRenderRoll the mix into balls and bake at 350 degrees for about 20 minutes.  I usually finish mine up in a non-stick flying pan for 2 minutes after baking just to get a nice crust on the outside.  Enjoy!
