Easy Healthy Deliciousness Sweet Potatoes

Sweet potatoes are delicious, but also an excellent sources of vitamin A, vitamin C, fiber and potassium.  They don’t need to be cooked with tons of butter and marshmallows to be good.  Here are some of my fav recipes that even your family will eat!

 

Oven “fried” Sweet Potaotes

Preheat over to 425 degrees

Peel and slice sweet potatoes into long thin wedges.

Toss with a little oil, salt and pepper (use a bowl of zip lock bag for easy tossing)

Arrange on non stick cookie sheets or on parchment paper.

Bake for approximately 20 minutes and than flip them over.

Cook for approximately another 15-20 minutes until crisp.

 

Sweet Potato and Spinach Quesadilla

Use a whole grain tortilla.

Peel and cut the sweet potato into pieces and cook until soft.

Lightly smoosh the pieces of sweet potato and place in tortilla.

Season according to your taste. (i.e. salt, pepper, paprika, garlic salt, whatever you would like)

Place some spinach in tortilla.

Top with low or nonfat mozzarella cheese (you can use whatever cheese you like, goat cheese is yummy too, but nonfat mozzarella is a tasty combo and a healthy option)

Place another tortilla on top and heat in a broiler or skillet until the cheese is melted.

Yummy to serve with salsa

 

Simple Mashed Sweet Potatoes

This is so simple and easy, but still yummy and nutritious.

Peel and chop sweet potatoes and either steam, boil, or roast until soft.

Mash

Add a little orange juice for another flavor element and sweetness.

Season with whatever you want.  Salt and Pepper and a little garlic salt is delish.  Orange zest is also a yummy addition

 

Sweet Potato Yogurt Dip

If you have leftovers of the above mashed sweet potatoes you can make a super yummy dip!  Or you can just make one mashed sweet potato just for this dip.

Mix the mashed potatoes and nonfat plain greek yogurt.  About a tablespoon of the yogurt or until desired creaminess.

Add a 1/4 teaspoon of honey

If you would like a tiny bit of spice you can add 1/8 teaspoon of chile powder.
