Preparing healthy meals can sometimes be a struggle. By prepping your meals ahead of time, you are ensuring that you not only have meals ready to go when you need them but that they are healthy too. While there are a ton of ideas out there for how to prep your meals, I’m taking it a step further! I’m sharing with you 20 healthy meal prep ideas that you can use to prep both healthy and easy meals for the week! These are great when you need a healthy meal, ready to go without taking time out of your week to make them!

Meal prep is a huge time saver and a big help when you are trying to lose weight.

A lot of the pitfalls of meal prep happen when hunger strikes so you reach for the easiest thing to eat that is usually the unhealthiest. With meals prepped ahead of time you can avoid that problem.  If you are a busy mom like me it also saves time during the week to help get dinner on the table. After driving my daughter around to dance, once we get home I don’t have an hour to cook dinner otherwise we wouldn’t be eating until it is passed bedtime.

Meal prep doesn’t mean it has to be individual meals in containers to take for lunches (although this is a great idea too.)  It can also be prepping all the food in one big container to just dump in the slow cooker or Instant Pot. It can also be cooking a bunch of chicken to repurpose through different meals throughout the week like chicken on top of salad, chicken quesadillas or chicken and rice bowl. 

Plan For The Week

Make a plan, write down the meals and then break it down to a grocery list. Fajitas? Cut up the veggies and chicken ahead of time so all you have to do is cook it because, quite frankly, the chopping of it all is what takes the most time. Get it down on Sunday and eat it all on Tuesday. You can also meal prep and freeze. I often do this with soups or slow cooker dumps. For a slow cooker dump, place all the ingredients for the recipe prepped and ready in a freezer bag. Then all you have to do is thaw and dump it in your slow cooker.

Once I started meal prepping more constituent I felt the stress of dinner during the week disappear. I also realized we ate so much better because I wasn’t giving into the “easy route” of just picking up a pizza or Chinese food. My husband and daughter also appreciate a home cooked meal so much more than takeout. I feel better physically when I am eating better. If I can take 2 hours on a Sunday to prep that is definitely worth it. Make it a family occasion! My daughter and husband love to help me chop and prep and we all think it is pretty fun. Enjoy!
